Avocados are, by far, one of my favorite fruits.

This alligator pear is often given a “bad rap” for its high fat content. Not all fats should be feared. Avocados contain some unusual fats that provide researched-based health benefits:

-Avocado is packed with essential nutrients, including vitamin A,B,C,E, and K, copper, iron, phosphorus, magnesium, and potassium.

-Avocados contain a rich supply of fat called oleic acid, which you can also find in olives and olive oil. Oleic acid increases the absorptive capacity of the digestive tract and lowers the risk of heart disease.

-Avocados contain anti-inflammatory properties, which can help mitigate a range of inflammatory associated illnesses.

-Avocados contain antioxidants and fiber, which also promote a healthy digestive system.

Here are some fun and simple recipes that your kids may even enjoy!

Avocado Pesto

2 avocados

1/2 c packed, fresh basil

4 tbs lemon juice

1 chopped, fresh garlic clove

salt to taste

water as needed

Place all ingredients in a food processor or using an immersion blender, and blend until smooth. Add water until desired consistency is reached.

(Pair this with some raw zucchini noodles for a delicious meal!)

Avocado Chocolate Mousse

2 avocados

1/3 c honey

1/3 c unsweetened cocoa powder

3 tbs coconut oil

4 oz dark chocolate pieces (optional)

Melt honey, coconut oil, and dark chocolate on the stovetop on medium low, being careful not to burn.

Blend all ingredients in a food processor until smooth.

Chill overnight

Raspberry Banana Avocado Smoothie

Avocados can really do no wrong in a smoothie—they add a lovely richness and thickness. If your kids are anti-avocado, they may not take notice of it paired with their other favorite fruits.

1 c frozen raspberries

1/2 avocado

1 banana

1 c coconut milk (almond milk or yogurt)

1/2 tsp vanilla extract

honey, dates, or stevia to taste

Blend in a food processor of Vitamix until smooth. Yields 1 large serving.
