Crepes for Kids

Crepes For Kids

Not gonna lie – I was totally inspired to make crepes by the recent Welcome to Burlington dinner at the Skinny Pancake. My apples and brie crepe was fantastic, and I was thinking how much my kiddos would love going there. So with my sister-in-law, who has been visiting from Arizona along with her two girls, we decided to make crepes for lunch with “pick your own” toppings. My children love pancakes, so I figured they’d be on board with crepes too, and having bowls of stuff for them to load on top was an added bonus. They were even more of a hit than I thought they’d be!

I studied a couple recipes on Pinterest, and ended up going with this one. I used my KitchenAid mixer (which is Pistachio, by the way – because that’s important), and mixed up the batter about an hour before lunch time. I used a very small skillet and cooked one at a time, which was a bit tedious, so I don’t recommend choosing this as a quick and easy meal. It does only take about three minutes to cook each crepe, though, so we easily had a good pile of them after fifteen minutes. I kept them all on a plate with a cover until we were ready for lunch. Also, I did double the recipe since I was feeding four kids and three adults.

The hooligans were all excited to pick their toppings, and they had quite an assortment to choose from. I made the sweet version of the recipe (which adds a little sugar and vanilla to the batter). For toppings, we had bowls of berries – the strawberries came right from my own raised beds! – local maple syrup, raspberry jam, and goat cheese. I ate mine with strawberries and goat cheese, and it was delicious. My daughter, who is pretty hesitant to try new foods, devoured her first crepe and even had a second one!

Since it does take some prior planning to make the batter ahead of time, and it’s not a quick pop-it-in-the-oven type of meal, I can’t see doing crepes as a meal very often. However, as a special treat (and a nice break from PB&J), I would definitely do it again!
