Recipe Post: Breakfast Cookies are Perfectly Acceptable

0

I’ve never written any recipe posts- although I love cooking.

I’m just not that great of a recipe writer and I don’t create my own recipes, I just alter recipes from other professional food bloggers, and I certainly don’t want to claim something that is not mine. However, sometimes we writers get a little writer’s block. I know you have heard of it. It’s real. Writing for something like a mom’s blog can easily put you in a rut. These breakfast cookies seemed to be only solution to my problem.  when one day I asked my kids what they thought I should write about.

To be fair, I didn’t start out planning to write a recipe post. I started by soliciting inspiration from my little people and asking them what they thought I should write about.

Dinosaurs talking in the playroom
“What do you think?” “I don’t know, what do you think?”

Here are their answers:

  • What you got for Christmas- Post in progress- Alexa anyone? Please save me from the Pokemon theme song. I now know all of the words and feel like I’m constantly listening to the Rocky theme song’s annoying little brother.
  • Fire Swords of Death- Intriguing, but what if it’s a let down. I mean, where would I even begin? And also, fire swords feel like they can’t be a real thing because swords are strong and penetrate and fire doesn’t really go through you, it consumes you. Fire swords aren’t real. They are opposing forces marketed as a child’s toy.
  • What you are doing today- Been there. Done that.
  • About your cancer– Same. Plus, cancer can get so BORING! I like to change it up from time to time.
  • Run away from storms- Is this an idea or were the kids just yelling out phrases? We’ll never know. In other news, the family now has a disaster preparedness plan.
  • Why you can’t ski– Ummm, because I’m weak and lazy? There, I said it. Just kidding, it’s because I’d rather sit in the lodge and drink hot toddies and stay warm.
  • If you want to play hide and seek, you should hide at the right time- Is this a hint that they don’t care what I write about, but would rather play? Probably.
  • What you think about winter- Okay, this I can get on board with. I love winter when it snows. When it’s just cold and icy, I feel annoyed. I turn to baking because I love cooking, but this can be taxing on the waistline- if you know what I mean. Here’s a recipe I found with my son who requested we make chocolate chip muffins, but when that meant we had to go to the store for chocolate chips, he decided against it.

Pinterest– activity manual of mom’s around the globe- is where we turned. My son, Emmet, chose a recipe I’d pinned for Healthy Breakfast Cookies and his mind was blown over the fact that he could actually eat cookies for breakfast.

This is a clear win- win. Baking? Check. Entertaining kids? Check. Cookies for Breakfast? Check. Healthy? Yes- and they taste delicious. Plus you can eat the “raw” dough because there is no egg or anything like that in here!

This recipe was adapted from Leelalicous.com and what I love about it is that it’s so easy to customize to what works for your family. Leelalicious makes delicious and nutritious family friendly foods and I love a good food blogger! This version of her breakfast cookies is gluten-free and can easily be made vegan by swapping out the honey for another liquid sweetener.

[yumprint-recipe id=’2′]Super easy! Super yummy! And a big hit with kids! So go ahead and whip your kids up a batch of cookies for breakfast. You’ll be winning parenting by the time you send the kids off to school.
